Cherry Cake Bites

I tried out a new recipe over the weekend on my guys here at home.  They said it was BETTER than the Peaches and Cream Cheese Cookie BarsI'm still partial to the peach recipe, but these cake bites are delicious.  You'll see similarities between the two in the way they are assembled but this recipe, except for the pie filling, is all from scratch.  Whereas, the peach one is more of a cheater recipe (not completely homemade).  This recipe is not so much a sheet pie recipe or a cookie bar recipe, but has more of a dense cake type quality to it.  All the same, though, it equals DELICIOUS

Cherry Cake Bites

Ingredients:
1 Cup Unsalted Butter, Softened
2 Cups Sugar
4 Eggs
1 tsp. Vanilla Extract
1/4 tsp. Almond Extract
3 Cups All-Purpose Flour
1 tsp. Salt
1 Can Cherry Pie Filling    

For the glaze:
1 Cup Powdered Sugar
1/2 tsp. Vanilla Extract
1/2 tsp. Almond Extract
2 TBS. Milk

Preheat oven to 350 degrees.  Grease a 15" x 10" x 1" baking sheet.  

Cream together the butter and sugar.  Mix in eggs and then vanilla and almond extracts.  In a separate bowl, stir together the flour and salt.  Add to wet ingredients, and mix thoroughly.  

Spread three cups of the batter on your baking sheet.  An angled icing spatula is great to use for this step.  Top batter with cherry pie filling.  Take remaining batter and drop by spoonfuls over the cherries.  (See, very similar to the peach recipe.)  Pop it into your oven and bake for 30-35 minutes. 

Allow it to cool while you prepare your glaze.  Drizzle your glaze over the entire pan of goodness.  Slice into bars and eat it up.  

This recipe freezes nicely.  It makes a large quantity of bars.  I cut ours into 1" x 1 1/2" pieces.  Just about the perfect size to throw one in your mouth and turn your back quickly so nobody sees you ATE ANOTHER ONE.
